Food Science and Nutrition: Principles, Concepts and Applications presents an integrated study of food science and human nutrition, linking the composition and properties of food with its nutritional functions, processing, preservation and contribution to health. The book is organised into five chapters that progress from fundamental concepts to practical nutritional applications. The opening chapter establishes the foundation by discussing food science, human nutrition, nutrient classification and functions, macronutrients, micronutrients, water, energy balance, nutritional requirements, dietary guidelines and balanced diets. The second chapter focuses on carbohydrates, proteins and lipids, covering their chemistry, classification, functions, dietary fibre, amino acids, protein quality, biological value and essential fatty acids. The third chapter examines vitamins, minerals and bioactive components. It covers fat-soluble and water-soluble vitamins, major and trace minerals, mineral absorption and bioavailability, antioxidants, phytochemicals, functional food components and nutrient deficiencies. The fourth chapter shifts attention to food science and technology, addressing physical and chemical properties, food preparation, cooking changes, processing, preservation, spoilage, food additives, safety, hygiene and contamination. The final chapter applies nutritional principles to health across the life course. It discusses nutrition during pregnancy and lactation, nutritional needs of infants, children, adolescents, adults and older adults, therapeutic nutrition, modified diets, nutrition-related disorders, dietary management, functional foods, nutraceuticals and public health nutrition.
